Stachyose is a oligosaccharide made up of galactose, glucose, and fructose. It is found in the rhizomes of plants in the waterweed genus and is a natural functional oligosaccharide. The pure product is a white powder, slightly sweet, with a sweetness level of 22% compared to sucrose, offering a refreshing taste without any peculiar odor. It is soluble in water but insoluble in organic solvents such as ether and ethanol.
