L-Carnosine, chemically known as β-alanyl-L-histidine, is a dipeptide composed of β-alanine and L-histidine, existing as a crystalline solid. High concentrations of carnosine are found in muscle and brain tissues. It was discovered alongside carnitine by the Russian chemist Vladimir Gulevich. Studies in the United Kingdom, South Korea, Russia, and other countries have demonstrated that carnosine exhibits potent antioxidant properties beneficial to the human body. Carnosine has been proven to scavenge reactive oxygen species (ROS) and α-β unsaturated aldehydes formed during oxidative stress through the excessive oxidation of fatty acids in cell membranes.
