Theaflavin is a golden yellow pigment found in black tea and is a product of tea fermentation. Biochemically, theaflavins are a class of polyphenol hydroxyl substances with the structure of theaphrophenolone. Theaflavins, the golden yellow pigment, make up 0.5% to 2% of the weight of dry tea, depending on how the black tea is processed. Theaflavins play a certain role in the bright color and strong taste of tea soup, and are an important quality indicator of black tea.
