Green Tea polyphenols(GTP) are a general term for polyphenolic compounds found in tea leaves. They are present in higher concentrations in green tea, accounting for 15% to 30% of its dry mass. Tea polyphenols are the primary components determining the color, aroma, flavor, and health benefits of tea. GTP contain six major components, among which catechin compounds are the most important, constituting 60% to 80% of total tea polyphenols. Catechins mainly comprise four substances: epicatechin (EC), epigallocatechin (EGC), epicatechin gallate (ECG), and epigallocatechin gallate (EGCG). Catechin compounds are the primary chemical constituents responsible for tea's health-promoting properties. Tea polyphenols exhibit various physiological activities, including antioxidant, anti-radiation, anti-aging, lipid-lowering, blood glucose-reducing, and antimicrobial/enzyme-inhibiting effects.
