Cysteine is a white crystalline or white powdery substance that is soluble in water, has a slight odor, is poorly soluble in ethanol, and insoluble in organic solvents such as ether. Its melting point is 240ºC, and it has a monoclinic crystal system. Cysteine is one of the sulfur-containing amino acids and is classified as a non-essential amino acid. In the body, it is synthesized through the exchange of the sulfur atom from methionine with the hydroxyl oxygen atom from serine, via cystathionine, and cysteine can lead to the production of glutathione. Cysteine is stable in acid but is easily oxidized to cystine in neutral and alkaline solutions.
