Sodium Copper Chlorophyllin is a dark green powder produced using natural green plant tissues (such as silkworm excrement, clover, alfalfa, bamboo leaves, etc.) as raw materials. These materials are extracted with some organic solvents. The central magnesium ions in chlorophyll are replaced with copper ions, followed by saponification with alkali to remove methyl and phytol groups, forming carboxylate groups that are stabilized as disodium salts. Thus, sodium copper chlorophyllin is a semi-synthetic pigment. Other structurally and synthetically similar chlorophyll-derived pigments include sodium iron chlorophyllin and sodium zinc chlorophyllin.

Natural chlorophyll is prone to decomposition under heat, light, acid, or alkaline conditions and is insoluble in water, limiting its applications. Therefore, structural modifications are made to transform natural chlorophyll into stable metalloporphyrin structures. These metalloporphyrins have garnered significant attention due to their expanding applications. Sodium copper chlorophyllin, as a type of metalloporphyrin, exhibits high stability and is widely used as a food additive, cosmetic additive, colorant, pharmaceutical ingredient, and photoelectric conversion material. In cosmetics, food and textiles, it acts as a dye, while in pharmaceutical products, it helps scavenge free radicals and degrade carcinogens.
